Summer has officially arrived and it is nice to change up the morning routine now that school has nearly wrapped up for the year. My kids head up north to sleepover camp for the summer but it was only a few years ago that I still had kids to rush out the door to day camp that started nearly an hour earlier than school. The key to getting everyone out the door on time and still smiling (me included!) was the breakfast popsicle. The breakfast popsicle is really just an accessorized smoothie on a stick, but it can be in your child’s hand in under 10 seconds and changing around the presentation - like with any food, vegetables included - makes it fun and exciting to try.
The banana peanut butter breakfast popsicle has been the crowd favourite around here lately and the key to making these sweet and delicious while also avoiding adding a bunch of unnecessary sugar is to use very ripe bananas. I either buy an extra bunch and let them ripen on the counter or I check out the reduced for quick sale rack at the supermarket where there are often big bunches of ripe fruit for less than a dollar.
To make the banana peanut butter popsicles, combine the following ingredients in a blender:
4 ripe bananas
¼ cup natural peanut butter
¼ cup milk of your choice - we used cashew milk for these ones
Handful of ice cubes
1 tsp vanilla
½ tsp cinnamon
Optional: ground flax or chia seeds
Anything else that would appeal to your kids - freeze dried fruit would be delicious as well as other seeds and dried fruit.
Process in the blender until smooth and pour into popsicle molds. Freeze for 6 to 8 hours.
Once frozen solid, it is time to transform these frozen smoothies into something more exciting! Melt some dark chocolate over a double boiler and then let it is cool down to room temperature. When the chocolate has cooled down, unmold the popsicles and place on a parchment lined cookie sheet. Drizzle the chocolate over the popsicles and quickly (because the chocolate will immediately harden) sprinkle them with nuts and cacao nibs. Pop the tray into the freezer and get ready to thrill your kids at the breakfast table in the morning when you break these out to eat!!
